Shell on or shell off. The tails are graded, glazed, IQF nitrogen frozen and then packed in a labelled bag and stored until dispatch.

Scampi Tails

• Shell off grades (packed x 454g bag): Jumbo (21/30), Gourmet (30/45), Select (45/60)
• Shell on grades (packed into 1 or 2kilo bag): Ex-Large (40/60), Large (60/90), Small (90/110)

Heads & Claws

Obtained from tailed langoustines, they are blast frozen into 10 kilo boxes, de-moulded and put into a labelled plastic protective bag.
